[Music] honestly this video was important to plan its miracle hello everybody I hope you're all doing really well welcome back to my channel I'm back to here with another big video you guys have asked for it I love to being / cook / eat so the one about film another video of you and this one is kind of like a healthy ish big obviously it's January a lot of people tend to like cook down or they know watch what they are trying to eat a little bit healthier this cake is somewhat healthy and still a big good so it's not exactly nutritional if you could say that then it's healthier so today we're going to be making a courgette and lime cake honestly coordinate cake is one of my favorite things I've tried it maybe I'd say a good solid five years ago my aunty makes an amazing corner kick and ever since I had Al's in Pat's delicious sounds been we've put a vegetable in the cake trust me carrot cake delicious Quadra kick even nicer let's also address how amazing this apron is and if you guys can see it that far away it says Luke outlaw and a play button and and this was kindly given to me by you and mr. Carlton if you want to know all thank you very much and this was my Christmas present problem and absolutely little bit he said you have to wear when you film you cooker videos say Here I am got myself green tea that's all the ingredients down below for you guys in terms of like weird some measurements but just you can see everything this is all we've got wise all you're gonna need is a food processor and a couple of balls and some utensils and then ingredients wise you're gonna need some self-raising flour some baking powder some eggs some vanilla extract some ice and sugar some avocado some lime juice and zest some sunflower oil and some courgette and also some sugar and a cup of tea is optional so let's get cracking so the first thing you're gonna need to do is pre-heat your oven to 180 degrees or 160 degrees and it's gas mark 4 and then you're going to want to prep your loft in so I've seen this is a love cake so I've got myself a really old and long - this is actually my mom's stock I need to Christmas and have lined it with some tinfoil a bitch baking parchment and I've got a little bit some flour over there as well you can just set that aside in a large ball what I've got going on here is some courgette so with the courgette all I've done is grated it with a fine grater I'll leave all the measurements down below and you're gonna want to put it in a tea towel and squeeze all of the juice out into a ball underneath it it's not exactly a nice job however it has to be done okay so this is the end result you've got a bowl full of really not so nice green liquid I'm trying to show you guys and then a tea towel full of courgette so once you squeeze all right across there what do you want to do is just empty it into a ball make sure it's all in there and then just pop the tea towel to one side and just set that aside so next step in the food processor you're going to want to add your avocado I've just obviously D skin this and then got rid of the storm I think 75 grams of avocado and then you're gonna want to hide your sunflower on this woman and this essentially is the fatness recipe so there's no butter and substances where you saved on the calories and this is really good avocados and ps3's in case it's really good and then you just want to blend that too and smooth so once you have a carro is nice and smooth you can just want to tip that into a clean ball it's all giving up a few lumps in there but you just want as smooth as possible I wouldn't do this by hand and just think you'll be on forever then into your ball you want to add your drained and squeezed courgette so just make sure that's all and then you want to add your golden caster sugar and then you're going to want to add three large free-range eggs and I'm just going to give them a quick beat before I put those in the coin your extra in and then you want to grab yourself your limes give them a little bit of a roll and just nest in two months worth of lysis so what's suggested in all your life then even I want to add a teaspoon of vanilla extract it's just absolutely obviously you bring a combine all the flavor I'm using the and some vanilla paste so I'm using slightly less than a teaspoon because it is so strong I think this stuff's actually from Waitrose which is really pretty but it's Taylor and College of vanilla being pissed at once interested so once you've got all your wet ingredients in your bowl it's time to just give everything a mix and mixture it's all combined and obviously it's gonna be quite a long term mixture because your courgettes quite roughly created but just to make sure everything is incorporated before your I dry ingredient also forgot to mention guys keep the limes for the juice because when this is big as soon as it comes up um we're gonna give it a little call the pricks and some fresh lime juice on there and when you use it for the frost as well so it's delicious so once everything's mixed our dry ingredients you've got your self raising flour straight in and then you have a teaspoon of baking powder and then you just want to fold your flour in obviously don't stir or too much otherwise it gets to 12 this is quite a stiff mixture guys so I've transferred to a wooden spoon just to make sure it's nice and corporated and haven't got any pockets of flour in there so you kind of look into something along that texture it's not quite dropping consistency but if you give it a little wiggle it does draw so then all you want to do is grab your Tim that's already lined and scream all contents of the ball into the tin and bake it at the desired temperature obviously 180 for a non-fan oven 160 for a 5-11 gas mark 4 for 1 hour so once this is all leveled off I usually just grab a spatula make sure it's all pushed into the corners you're going to pop this in the oven if it does start to brown on the top a little bit too much just grab a piece of foil and just cover it but yet pick this for one hour this the cake is baked and it smells oh my god smells delicious and you're gonna want to grab a knife and just put some soles indicate I did have a good kick ok tester but I don't I'm just using a knife a chocolate balls you want to grab one of the lines you've had from earlier give it a roll of really helps to get the juices out I think you just cut it in half I've got a really fancy like squeezing here but you can just use well you can just use a regular one and you just want to squeeze some fresh lime over the kick and this just really helps with keeping them moist and also gives the end of a really lovely hint of flavor so once that's cut all the liner you squeeze onto you for about 10-15 minutes and then completely remove it at the tip and leave it a cool completely and then we're good I said so the law is out of the oven that it is officially curled it's huge and it really expected to that big so in a ball I've got 200 grams of icing sugar I'm just going to squeeze in some fresh lime juice now I often recommend doing it a little bit at a time because if you add it all at once sometimes you can go a bit too runny kind of want like a thick if I see so I'm just going to do that for now once I put your icing and it's a nice subtle really consistency like that you can drizzle all the top I even spread it all by arm to Pintrest online and you're a nice like zigzag shape and then finish it with some lime zest and now all I'm gonna do is just create some fresh lime zest over the top just to give it a nice little hint of color and also help with the flavor and lemon or than it is a lime and quadrant kit so guys we're going to go on to the cush and see what it cuts like hey oh wow

INGREDIENTS: thin courgettes 300g, coarsely grated ripe avocado 75g (weight after peeling and stoning) sunflower oil 75ml, plus a little extra for greasing limes 2, zested and juiced golden caster sugar 175g eggs 3 large, beaten with a fork vanilla extract 1 tsp self-raising flour 350g baking powder 1 tsp DRIZZLE icing sugar 140g lime 1, zested and juiced Method: 1. Heat the oven to 180C/fan 160C/gas 4. Oil and line a 900g loaf tin with a long strip of foil and a long strip of baking paper that comes up and above the narrow ends of the tin. Put the grated courgette into a clean tea towel and squeeze out as much liquid as you can. 2. Blend the avocado with the oil in a food processor until smooth. Tip the courgette into a big bowl with the avocado oil, lime zest, sugar, eggs and vanilla. Stir together to mix thoroughly, then fold in the flour and baking powder. Scrape into the tin and bake in the oven for 1 hour. 3. Test the cake by pushing a skewer into the centre and checking it comes out clean – if there’s still some wet mixture, bake for another 15 minutes and re-test. Cool for 20 minutes in the tin, then lift the cake out onto a wire rack. Prick the top with some more skewer holes, and drizzle over the juice from 1 lime. Leave to cool completely on the wire rack. 4. When the cake is cool, peel off the paper. Sift the icing sugar into a bowl, then mash in enough lime juice to make a stiff but runny icing – you should have one lime left-over from the cake, and one new one.
